  • 1 tsp Cajun seasoning

Pasta

  • 12 oz twisted pasta (rotini or fusilli)
  • Water and salt for boiling
  • 1/2 cup reserved pasta water (optional)

Sauce

  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a rolling boil. Cook the twisted pasta until al dente, about 8 to 10 minutes. Reserve half a cup of pasta water before draining the pasta.
  2. Season and Sear the Steak: Toss the cubed sirloin with salt, black pepper, garlic powder, and smoked paprika. Heat olive oil in a skillet over medium-high heat. Add the steak cubes and sear without moving for about two minutes, then turn to brown all sides evenly. Once browned, remove the steak from the skillet and set aside to rest.
  3. Create Garlic Butter Base: Reduce heat to medium. Add the unsalted butter to the skillet, scraping up any browned bits left from the steak. Stir in the minced fresh garlic and cook for 1 to 2 minutes until the garlic is golden and fragrant but not burnt.
  4. Build Cajun Alfredo Sauce: Pour the heavy cream into the skillet with the garlic butter. Stir in Cajun seasoning, additional garlic powder, salt, pepper, and a pinch of red pepper flakes for heat. Let the sauce simmer gently for 3 to 4 minutes until it slightly thickens. Remove from heat and stir in the freshly grated Parmesan cheese until melted and the sauce is creamy.
  5. Combine with Pasta: Add the drained pasta directly to the skillet with the sauce. Toss thoroughly to coat the pasta evenly. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.
  6. Finish with Steak and Serve: Return the cooked steak cubes to the skillet and gently mix to warm them through and coat in the sauce. Garnish with freshly chopped parsley and serve immediately while hot.
