For the Shrimp:

  • 2 lbs. extra large shrimp, peeled & deveined
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper

For the Vegetables:

  • 2 small zucchini, sliced into 1″ coins
  • 1 small yellow squash, sliced into 1″ coins
  • 3/4 cup cherry tomatoes
  • 1/3 cup fresh basil, chiffoned

Instructions

  1. Preheat oven to 400° F.
  2. Add prepared shrimp to a large bowl.

  3. Mix garlic cloves, smoked paprika, black pepper, parmesan cheese, and olive oil in a small bowl.
  4. Pour mixture over shrimp and toss to coat.

  5. Toss zucchini, squash, and cherry tomatoes with olive oil, salt, and pepper.
  6. Arrange shrimp and vegetables on a baking sheet in a single layer.

  7. Bake at 400°F for 12 minutes or until shrimp is cooked.
  8. Top with fresh basil and serve.
