Ingredients

Scale

Fats & Oils

  • 4 tablespoons unsalted butter (or ghee)
  • 2 tablespoons avocado oil, coconut oil, or olive oil

Vegetables

  • 1/2 onion, chopped
  • 1/2 head green cabbage, chopped
  • 1 pound (450g) kale, Lacinato or dinosaur, washed and thinly sliced
  • 4 cloves garlic, minced

Seasonings & Liquids

  • 2 tablespoons low sodium vegetable stock
  • 1/2 teaspoon salt and pepper, or to taste
  • 1/2 teaspoon red chili pepper flakes, or to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat Fats and Sauté Onion: Heat the butter and oil in a large pan or skillet over medium-high heat. Sauté the chopped onion until softened and translucent, about 3 minutes.
  2. Cook Cabbage: Add the chopped cabbage to the skillet and cook for about 4-5 minutes, stirring occasionally, until it begins to soften and caramelize on the edges.
  3. Add Kale and Seasonings: Add the sliced kale, minced garlic, salt, pepper, and red chili pepper flakes to the pan. Cook for 8-10 minutes, stirring occasionally, until the vegetables are well-browned and thoroughly softened.
  4. Deglaze with Stock: Pour in the low sodium vegetable stock to deglaze the pan, scraping the bottom with a wooden spoon to lift any browned bits. Cook for 2 minutes to slightly reduce the liquid.
  5. Final Seasoning and Serve: Cook the mixture for an additional 30 seconds until fragrant. Adjust seasoning with extra pepper if desired, sprinkle freshly chopped parsley on top, and serve the sautéed garlic cabbage kale skillet immediately. Enjoy!

Notes

  • Use ghee for a richer, nutty flavor and dairy-free option.
  • Adjust red chili flakes according to your preferred spice level.
  • Adding a splash of lemon juice before serving can brighten the flavors.
  • For a vegan version, substitute butter with all oil.
  • Serve as a side dish or mix with cooked grains for a hearty vegetarian meal.
