This Gluten-Free Tortillas recipe offers a simple and quick way to make soft, pliable tortillas perfect for wraps, tacos, or any meal requiring a gluten-free option. Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups gluten-free all-purpose flour with xanthan gum
  • 1 teaspoon gluten-free baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 3/4 cups very warm water (heated for 20 seconds in microwave)
  • 2 tablespoons vegetable oil (canola oil preferred)

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together gluten-free all-purpose flour, gluten-free baking powder, and salt until well combined.
  2. Add Wet Ingredients: Stir in the very warm water and vegetable oil. Mix with a spoon or spatula until the mixture starts to come together.
  3. Form Dough Ball: Use your hands to knead the mixture in the bowl until it forms a smooth dough ball and all the liquid is fully absorbed.
  4. Preheat Skillet: Place a cast-iron or heavy skillet over medium-high heat and grease lightly, allowing it to preheat while you prepare the tortillas.
  5. Portion Dough: Pinch off golf ball-sized pieces of dough, rolling each into a ball. This recipe yields about 8 dough balls.
  6. Keep Dough Covered: Cover the bowl containing remaining dough with a towel to prevent it from drying out while you roll each ball.
  7. Flatten Dough: Place one dough ball on a piece of parchment paper and flatten it with your hand into a disk shape.
  8. Roll Out Tortilla: Cover the dough ball with plastic cling wrap or parchment paper and use a rolling pin to roll it into a thin, 7-inch circle.
  9. Cook Tortilla: Place the rolled tortilla in the greased preheated skillet. Cook over medium-high heat until lightly browned with some bubbles on the top, about 30 seconds to 1 minute per side. Do not overcook, as tortillas will become stiff.
  10. Keep Warm: Stack cooked tortillas on a plate and cover them with a towel to keep warm and soft while finishing the rest.
  11. Store: Once cooled completely, store the tortillas in a plastic storage bag in the refrigerator for later use.

Notes

  • Use warm water to help bind the gluten-free dough better and create a softer tortilla.
  • Do not overcook the tortillas; they should have a few light brown spots and bubbles but remain pliable.
  • If the dough feels sticky, let it rest for a few minutes to become easier to handle.
  • Gluten-free tortillas can dry out quickly; keep them covered as you work and store properly after cooking.
  • Reheat tortillas in a dry skillet or microwave wrapped in a damp towel for best texture.
