Ingredients

Scale

Roasted Sweet Potatoes

  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil (for tossing sweet potatoes)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Ground Beef Mixture

  • 1 lb lean ground beef (93% lean preferred)
  • 1 yellow onion, diced
  • 1 tbsp olive oil (for cooking onion and beef)
  • 1 taco seasoning packet (or 2 tbsp homemade taco seasoning)

Toppings and Finish

  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp hot honey

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the peeled and diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated. Spread the sweet potatoes out on a baking sheet in a single layer. Roast in the oven for 40 to 45 minutes, or until the sweet potatoes are caramelized and tender, stirring halfway through for even cooking.
  2. Cook the Onion and Ground Beef: While the sweet potatoes roast, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion to the skillet and cook until softened, about 5 minutes. Then add the ground beef and taco seasoning to the skillet. Cook, stirring frequently, until the beef is fully browned and cooked through, about 7 to 10 minutes. Drain any excess fat if needed.
  3. Assemble the Bowls: To assemble, start by layering the roasted sweet potatoes at the bottom of each bowl. Top with the seasoned ground beef and cooked onions. Next, add slices of fresh avocado and dollop with cottage cheese.
  4. Add the Hot Honey Drizzle: Finish each bowl by drizzling 2 tablespoons of hot honey evenly over the top. This adds a spicy-sweet flavor that complements the savory and creamy ingredients beautifully. Serve immediately.

Notes

  • You can substitute the taco seasoning with your own blend of chili powder, cumin, paprika, and garlic powder if preferred.
  • For a spicier kick, increase the amount of hot honey or add a pinch of cayenne pepper to the beef mixture.
  • Roast the sweet potatoes a day ahead and reheat for faster meal prep.
  • Use low-fat or full-fat cottage cheese depending on your dietary preference.
  • This bowl can be served with a side of greens or a simple salad for added freshness.
