Ingredients

Scale

Main Ingredients

  • 10 3/4 ounces cream of chicken soup (1 can)
  • 8 ounces shredded cheddar cheese (2 cups loosely shredded)
  • 3/4 cup sour cream
  • 20 ounces shredded hash browns

Topping

  • 1 1/2 cups corn flakes (slightly crushed)
  • 1/4 cup butter (melted)

Instructions

  1. Preheat Oven: Preheat your oven to 350° F (175° C) and lightly spray an 11 x 7-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Mix Soup, Sour Cream and Cheese: In a large mixing bowl, combine the cream of chicken soup, sour cream, and shredded cheddar cheese. Stir thoroughly until all ingredients are well blended.
  3. Add Hash Browns: Add the shredded hash browns into the mixture and stir well to ensure the potatoes are evenly coated with the creamy mixture.
  4. Spread in Baking Dish: Transfer the hash brown mixture into the prepared baking dish and spread it out evenly.
  5. Prepare Optional Topping: In a small bowl, combine the crushed corn flakes and melted butter, mixing until the flakes are well coated.
  6. Add Topping: Sprinkle the buttered corn flakes evenly over the hash brown mixture in the baking dish for a crispy topping.
  7. Bake: Place the casserole in the preheated oven and bake for approximately 1 hour, or until the hash browns are tender and the topping is golden brown.

Notes

  • You can substitute cream of chicken soup with cream of mushroom soup for a vegetarian option if desired.
  • Use fresh shredded potatoes if you prefer, but frozen hash browns work best for convenience.
  • The cornflake topping is optional but adds a delightful crunch to the casserole.
  • Let the casserole rest for 5-10 minutes after baking to allow it to set before serving.
  • For a lower-fat version, use reduced-fat cheddar cheese and sour cream.
