  • 11 slices Colby jack cheese (or American cheese)

  • 12 pack Hawaiian rolls
  • 6 tablespoons butter (divided)

Vegetables and Pickles

  • 1 large sweet onion, diced
  • 24 dill pickles

Seasonings and Condiments

  • 1 teaspoon salt
  • 1 teaspoon cracked pepper
  • 1/2 cup mayonnaise
  • 1.5 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 teaspoons pickled juice
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat and Prepare Buns: Preheat your oven to broil. Slice the Hawaiian rolls horizontally and place them cut side up, side-by-side, on a lined baking sheet. Melt 4 tablespoons of butter and use a basting brush to evenly coat the inside of all rolls. Broil for 3-4 minutes until the buns are golden brown, watching carefully to prevent burning.
  2. Bake the Ground Beef: Reduce oven temperature to 350°F. In a large mixing bowl, combine 2 lbs of ground beef with salt and cracked pepper, mixing well. Press the seasoned beef evenly into a 9×13-inch casserole dish. Bake for 20 minutes until cooked through.
  3. Sauté Onions: While the beef bakes, melt 1 tablespoon of butter in a pan over low heat. Add the diced sweet onion and cook gently, stirring occasionally, until browned and caramelized, about 15 minutes.
  4. Drain Beef and Assemble Sliders: Once the beef has finished baking, drain any excess juices. On the baking pan with the toasted buns, place a layer of dill pickle slices on each bottom bun. Carefully transfer the slab of cooked beef onto the pickles on the bottom buns using two spatulas.
  5. Add Cheese and Onions: Place a double layer of cheese slices evenly over the beef slab. Next, add a layer of the sautéed onions on top of the cheese.
  6. Finish Assembly and Final Bake: Place the top buns over the onions. Brush the tops of the buns with the remaining 1 tablespoon of melted butter. Optionally, sprinkle sesame seeds on top. Return the entire assembled slider pan to the oven and bake at 350°F for about 15 minutes, or until the cheese is melted and everything is heated through.
