Ingredients

Scale

Chicken and Vegetables

  • 3 cups shredded chicken (rotisserie or cooked chicken breast)
  • 1 cup chopped spinach, broccoli florets, or sliced mushrooms

Cauliflower Rice

  • 4 cups cauliflower rice (store-bought or homemade)
  • 1 tbsp olive oil (for sautéing the cauliflower rice)

Dairy and Cheese

  • 8 oz (1 cup) cream cheese (softened) (or Greek yogurt for a lighter version)
  • 1 cup shredded cheddar cheese (divided, or use a mix of cheeses like mozzarella and parmesan)

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper

Instructions

  1. Prep Your Ingredients: Gather and prepare all ingredients. If using raw chicken, cook it fully and shred it. Prepare cauliflower rice by pulsing cauliflower florets in a food processor or using store-bought cauliflower rice. Preheat your oven to 375°F (190°C).
  2. Sauté the Cauliflower Rice: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the cauliflower rice and cook for 5 to 7 minutes, stirring occasionally, until the cauliflower is tender and most of the moisture has evaporated.
  3. Sauté the Vegetables (Optional): If using spinach, broccoli, or mushrooms, lightly sauté them in a separate pan until tender. This step enhances their flavor and prevents excess moisture in the casserole.
  4. Mix the Ingredients: In a large mixing bowl, combine the shredded chicken, sautéed cauliflower rice, cream cheese, half of the shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Stir well until all ingredients are thoroughly combined. Then fold in the sautéed vegetables.
  5. Assemble the Casserole: Grease a 9×13-inch baking dish and transfer the mixture evenly into the dish. Spread it out to form an even layer. Sprinkle the remaining shredded cheddar cheese evenly over the top for a cheesy crust.
  6. Bake the Casserole: Place the baking dish in the preheated oven and bake uncovered for 20 to 25 minutes or until the cheese on top is melted, bubbly, and golden brown. Remove from the oven and allow to cool slightly before serving.
