This festive Holiday Butternut Squash Hummus combines creamy classic hummus with roasted butternut squash, fresh cranberries, pomegranate arils, and fragrant rosemary for a deliciously vibrant appetizer perfect for holiday gatherings.

Ingredients

Scale

Hummus Base

  • 10 ounce container Sabra classic hummus

Roasted Butternut Squash

  • ¾ cup diced butternut squash
  • ½ tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • 1 sprig fresh rosemary leaves, chopped

Fruit and Garnish

  • ½ cup fresh or frozen cranberries
  • ¼ cup pomegranate arils
  • 1 sprig fresh rosemary leaves, chopped

Instructions

  1. Preheat Oven: Set your oven to 400°F (204°C) to prepare for roasting the butternut squash.
  2. Prepare Butternut Squash: Toss the diced butternut squash with olive oil, salt, pepper, and half of the chopped rosemary ensuring the squash is well coated.
  3. Roast Squash: Spread the coated butternut squash in a single layer on a baking sheet. Roast for 12-15 minutes, tossing halfway through, until softened and lightly browned on the edges.
  4. Cool Squash: Remove the roasted butternut squash from the oven and let it cool for about 5 minutes to avoid mixing hot ingredients with the hummus.
  5. Combine Ingredients: In a bowl, gently toss the roasted squash with cranberries, pomegranate arils, and the remaining chopped rosemary to combine flavors.
  6. Assemble Hummus: Scoop the classic hummus onto a serving plate or shallow bowl, creating a well in the center. Fill this well with the butternut squash and fruit mixture.
  7. Serve: Serve the hummus warm or at room temperature paired with pita chips, toasted bread slices, or your preferred dippers for a perfect holiday appetizer.

Notes

  • Using fresh cranberries adds a tart contrast, but frozen can be used if fresh are unavailable.
  • Adjust salt and pepper to your taste when tossing the squash.
  • For a slightly sweeter profile, drizzle a little honey over the squash mixture before serving (optional).
  • This hummus is best served the same day but can be refrigerated for up to 2 days; bring to room temperature before serving.
  • For a nut-free version, ensure your hummus brand is manufactured in a nut-free facility.
