Ingredients

Scale

Main Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground beef*
  • 1 cup finely chopped sweet yellow onion

Seasonings:

  • 4 tablespoons tomato paste
  • 1 ½ teaspoons sweet paprika
  • 1 teaspoon dried oregano
  • ¾ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Additional Ingredients:

  • 4 cups low sodium beef broth
  • 1 ½ cups elbow macaroni pasta (uncooked, 8 ounces by weight)
  • 2 cups shredded cheddar cheese

Instructions

  1. Heat the olive oil: In a Dutch oven or large skillet, heat the olive oil over medium-high heat. Add the ground beef and onion. Cook until beef is browned, crumbling as it cooks. Drain excess grease if needed.
  2. Add seasonings: Stir in the tomato paste, paprika, oregano, garlic powder, chili powder, salt, and pepper. Then pour in the beef broth.
  3. Simmer with pasta: Add the pasta to the pot and bring to a simmer. Reduce heat, cover, and simmer for about 9-12 minutes, stirring occasionally, until pasta is cooked and the mixture is slightly saucy.
  4. Stir in cheese: Remove from heat and stir in the shredded cheddar cheese until melted. Serve hot.

Notes
