  • 4 cups marshmallows (divided)
  • Peppermint candy canes or crushed peppermints (about 1/2 cup) for garnish

Instructions

  1. Prepare the Pan: Line an 8×8 inch baking pan with foil or parchment paper, then lightly spray with cooking spray to ensure easy removal of the fudge.
  2. Melt Ingredients: In a double boiler, combine 1 1/2 cups of semi-sweet chocolate chips, 1 1/2 cups of milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix. Stir continuously over medium heat until the mixture is fully melted and smooth.
  3. Add Marshmallows: Stir in 2 cups of marshmallows and continue stirring for about 1 minute until they begin to melt and blend into the fudge mixture.
  4. Add Vanilla: Remove the mixture from heat and stir in 2 teaspoons of vanilla extract, mixing well to incorporate the flavor evenly.
  5. Transfer and Top: Pour the fudge mixture into the prepared pan, smoothing the surface. Press the remaining 2 cups of marshmallows evenly on top of the fudge to create a textured topping.
  6. Chill: Refrigerate the fudge for at least 4 hours until firmly set.
  7. Cut into Squares: Once set, remove the fudge from the pan and cut it into bite-sized squares.
  8. Melt Remaining Chocolate: Melt the remaining 1/2 cup of semi-sweet chocolate chips in the microwave in 30-second increments, stirring between each until smooth.
