Hummus

  • 1 15 oz can chickpeas
  • 3 tablespoons lemon juice
  • 2 tablespoons tahini
  • 12 garlic cloves

  • 23 ice cubes

Ground Beef and Pine Nuts

  • 3 tablespoons pine nuts
  • 1 ½ tablespoons extra virgin olive oil (divided)
  • ½ pound lean ground beef
  • 1 teaspoon 7 spice (or cinnamon/allspice)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Serving

  • Fresh parsley (for garnish)
  • Olive oil (for drizzling)
  • Pita bread or pita chips (optional)

Instructions

  1. Peel the Chickpeas (Optional): Place the canned chickpeas in a bowl of water and rub them together gently to remove their skins. This step is optional but helps create a creamier hummus texture.
  2. Blend Chickpeas: Drain the chickpeas well and transfer them to a food processor. Blend until they break down into a powder-like texture, stopping to scrape down the sides as needed.
  3. Add Hummus Ingredients: Add lemon juice, tahini, garlic cloves, salt, and 2-3 ice cubes to the food processor. Blend continuously for about 5 minutes until the mixture becomes smooth and creamy. Taste and adjust salt or lemon juice if necessary.
  4. Spread Hummus: Spoon the hummus onto a serving plate or bowl. Use the back of a spoon to spread it evenly and create decorative swirls on top.
  5. Toast Pine Nuts: In a medium skillet over medium heat, warm ½ tablespoon of olive oil. Add pine nuts and toast them, stirring frequently until they turn golden brown. Remove from heat and set aside.
  6. Cook Ground Beef: In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the ground beef, season with 7 spice, salt, and black pepper. Cook and break up the meat with a spatula until browned and cooked through, about 5-7 minutes.
  7. Assemble the Dish: Transfer the cooked ground beef over the hummus spread. Sprinkle the toasted pine nuts on top. Garnish with fresh parsley and drizzle olive oil around the platter. Serve warm or at room temperature alongside pita bread or chips.
