Instructions

  1. Prepare the Peppers: Wash, dry, and chop the jalapenos and red bell pepper into chunks to prepare them for mincing.
  2. Mince the Peppers: Place the chopped peppers in a food processor and pulse on the chop setting until finely minced, ensuring you have 4 cups total for the jam.
  3. Combine Ingredients: In a large, heavy-bottomed pot, combine the minced peppers, apple cider vinegar, and sugar. Stir thoroughly to mix all ingredients evenly.
  4. Initial Cooking: Bring the mixture to a boil over medium-high heat, stirring constantly to avoid burning. Once boiling, reduce to medium-low heat and let it simmer for about 10 minutes, stirring occasionally.
  5. Add Pectin: Stir in the powdered pectin thoroughly until completely dissolved in the mixture.
  6. Boil to Set: Increase heat back to medium-high and bring the mixture to a rolling boil. Boil for 1-2 minutes while stirring constantly to ensure proper thickening.
  7. Test Consistency: Perform a gel test by placing a small amount of hot jam on a chilled plate. Let it cool for a minute; if set to desired consistency, proceed, otherwise boil and test again.
  8. Finish: Remove the pot from heat and skim off any foam that formed on the surface for a clear jam.
  9. Store: Carefully ladle the hot jam into sterilized jars and store in the refrigerator for up to several weeks.
