  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Jalapeno Peach Glaze:

  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Season the chicken: Season the chicken breasts with salt and black pepper on both sides.
  3. Sear the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown. Remove and set aside.
  4. Cook the jalapenos and peaches: In the same skillet, add diced jalapenos and peaches. Cook for 2-3 minutes until slightly softened.
  5. Prepare the glaze: In a small bowl, whisk together honey, apple cider vinegar, water, and cornstarch until smooth.
  6. Combine and bake: Pour the honey mixture over the jalapenos and peaches. Stir well and bring to a simmer. Return the chicken breasts to the skillet, spooning some sauce over the top. Transfer the skillet to the oven and bake for 20-25 minutes.
