  • ½ cup unsalted butter, softened

First Layer:

  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 8 oz whipped topping, thawed

Second Layer:

  • 2 3.4oz instant lemon pudding boxes
  • 3 cups cold milk

Third Layer:

  • 8 oz whipped topping, thawed
  • Zest of lemon
  • Lemon slices (for garnish)

Instructions

  1. Crust: Preheat the oven to 350°F. Spray a 13×9 baking dish with cooking spray. Combine crust ingredients in a large bowl and press into the baking dish. Bake for 15-18 minutes until golden brown. Cool completely.
  2. First Layer: Cream together cream cheese and sugar. Stir in lemon zest, juice, and whipped topping. Spread over the crust and chill in the refrigerator for at least 30 minutes.
  3. Second Layer: Combine pudding mix and milk until smooth. Spread over the cream cheese layer and chill for at least 15 minutes.
  4. Third Layer: Spread remaining whipped topping over the pudding layer. Optionally, garnish with nuts, lemon zest, or slices. Chill for at least 1 hour before serving. Store leftovers in the refrigerator.
