5.2 from 16 reviews

Mandarin Posset is a simple and elegant 4-ingredient dessert featuring creamy, tangy flavors of mandarin orange. This easy-to-make posset requires just heavy cream, sugar, mandarin zest, and fresh mandarin juice, resulting in a smooth, velvety treat perfect for any occasion.

Ingredients

Scale

Mandarin Posset

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • Pinch of salt
  • 4 tsp mandarin zest
  • 6 tbsp (3 oz) mandarin juice (freshly squeezed)
  • Optional: pinch of turmeric for color

Instructions

  1. Prepare Mandarins: Zest the mandarins to get 4 teaspoons of zest. Then slice the mandarins in half and juice them carefully using a citrus reamer or juicer. Scoop out any remaining flesh with a spoon. You will need about 6 large mandarins to yield 6 tablespoons of juice for the recipe.
  2. Heat Cream Mixture: In a saucepan over medium heat, combine the heavy cream, granulated sugar, pinch of salt, mandarin zest, and turmeric if using. Bring the mixture to a boil, then reduce the heat slightly to allow it to simmer for 5-6 minutes. Stir frequently to prevent the cream from burning or boiling over.
  3. Strain and Add Juice: Remove the saucepan from heat and strain the mixture through a fine mesh sieve to discard the zest. Whisk the freshly squeezed mandarin juice into the strained cream mixture. The mixture will slightly thicken as the juices integrate.
  4. Assemble and Chill: Arrange the mandarin halves on a serving plate or platter. Pour the posset mixture into the mandarin cups. Refrigerate the assembled dessert for at least 3 hours or up to overnight until the posset has set and become firm.

Notes

  • Use fresh mandarins for best flavor; bottled juice may alter the taste.
  • Keep a close eye on the cream while heating to avoid boiling over or burning.
  • The optional turmeric adds a subtle golden color but no significant flavor change.
  • This dessert can be made a day ahead, making it perfect for entertaining.
  • For a lighter version, try using half-and-half instead of heavy cream, but note the texture will be less rich.
