For the Panna Cotta:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 0.5 cup granulated sugar
  • 1 vanilla bean
  • 2.5 tsp unflavored gelatin
  • 3 tbsp cold water
  • 1 pinch salt

For the Mango Layer:

  • 2 ripe mangoes
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp unflavored gelatin
  • 2 tbsp cold water

Instructions

  1. Prepare Molds: Lightly grease molds and set on a tray.
  2. Bloom Gelatin: Bloom gelatin in cold water for 5–10 minutes.
  3. Heat Cream: Heat cream, milk, sugar, vanilla, and salt until simmer.
  4. Dissolve Gelatin: Add gelatin and whisk until dissolved.
  5. Pour Base: Cool mixture and pour into molds.
  6. Chill Base: Chill for 4 hours until set.
  7. Prepare Mango: Puree and strain mango. Bloom second gelatin.
  8. Mix Mango Layer: Heat some puree, dissolve gelatin, combine with the rest.
  9. Chill Mango: Cool, pour over the base, and chill for another 2 hours.
  10. Garnish: Garnish before serving with mint or coconut flakes.
