For the Panna Cotta:
- 2 cups heavy cream
- 1 cup whole milk
- 0.5 cup granulated sugar
- 1 vanilla bean
- 2.5 tsp unflavored gelatin
- 3 tbsp cold water
- 1 pinch salt
For the Mango Layer:
- 2 ripe mangoes
- 2 tbsp sugar
- 1 tsp lemon juice
- 1 tsp unflavored gelatin
- 2 tbsp cold water
- Prepare Molds: Lightly grease molds and set on a tray.
- Bloom Gelatin: Bloom gelatin in cold water for 5–10 minutes.
- Heat Cream: Heat cream, milk, sugar, vanilla, and salt until simmer.
- Dissolve Gelatin: Add gelatin and whisk until dissolved.
- Pour Base: Cool mixture and pour into molds.
- Chill Base: Chill for 4 hours until set.
- Prepare Mango: Puree and strain mango. Bloom second gelatin.
- Mix Mango Layer: Heat some puree, dissolve gelatin, combine with the rest.
- Chill Mango: Cool, pour over the base, and chill for another 2 hours.
- Garnish: Garnish before serving with mint or coconut flakes.
