  • ¾ cup whole milk
  • ½ cup granulated sugar
  • 1 envelope (7 grams) instant yeast
  • 1 whole egg + 1 egg yolk
  • 8 tablespoons unsalted butter, melted and slightly cooled
  • 3 ½ cups all-purpose flour
  • 2 teaspoons kosher salt

Garlic Herb Butter

  • 1 head of garlic
  • 2 tablespoons finely chopped chives
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat Oven and Activate Yeast: Preheat your oven to 400˚F. In a small saucepan, gently heat the milk and sugar to between 110-115˚F, making sure it does not exceed 120˚F. Sprinkle the instant yeast over the warm milk and let it sit for about 10 minutes until the yeast becomes foamy, activating it.
  2. Prepare Dough Mixture: In the bowl of a stand mixer, combine the whole egg, egg yolk, and melted butter. Whisk briefly to mix. Add the milk and yeast mixture, kosher salt, and all-purpose flour. Use a spatula to mix until a shaggy dough forms.
  3. Knead the Dough: Attach the dough hook to your mixer and knead the dough on medium-high speed for approximately 5 minutes until it is mostly smooth and elastic, and it bounces back when pressed.
  4. First Rise: Shape the dough into a ball and place it in a greased bowl. Cover the bowl and let the dough rise in a warm place for 90 minutes, or until doubled in size.
  5. Roast the Garlic: Meanwhile, slice the top off the head of garlic to expose the cloves. Wrap the garlic head tightly in aluminum foil and roast in the oven for 1 hour until the cloves are golden brown and very soft. Let cool slightly, then squeeze the roasted garlic cloves into a bowl and mash with a fork.
  6. Make Garlic Herb Butter: Whisk together the mashed roasted garlic, chopped chives, and melted butter in a bowl. Set this aromatic garlic herb butter aside.
  7. Prepare Dough for Shaping: After the dough has risen, punch it down to release air. Divide the dough into two equal pieces.
  8. Roll and Trim Dough: Roll out one half of the dough on a floured surface into a rectangle about 16 by 13 inches. Trim edges to create a neat 15 by 12 inch rectangle.
  9. Cut and Layer Strips: Cut the dough into six strips, 2.5 inches wide, running along the 15-inch side. Leave one strip plain, and brush the other five strips evenly with the garlic herb butter, coating each in a thin layer to the edges.
  10. Stack and Cut Rolls: Stack the strips with the plain strip on top. Cut the stacked strips into 2-inch rectangles using a sharp knife, cutting straight through to preserve the layers. Repeat with the second half of the dough to yield 12 fan rolls total.
  11. Second Rise: Place each fan roll into a greased muffin tin with the cut side facing up. Cover and let rise in a warm place for 1 to 1.5 hours until puffed.
  12. Bake the Rolls: Reduce oven temperature to 350˚F. Bake the rolls for 16-18 minutes or until they turn golden brown on top.
  13. Finish with Garlic Butter: Immediately brush the hot rolls with additional garlic chive butter (re-melt if necessary). Allow them to cool slightly before serving for the best flavor experience.
