  • 2 teaspoons cornstarch
  • 1 1/4 cups white granulated sugar
  • 1 teaspoon white wine or red wine vinegar
  • 1/4 teaspoon pure vanilla extract

Citrus Curd:

  • 3/4 cup citrus juice (combination of oranges and meyer lemons)
  • 4 tablespoons unsalted butter (at room temperature)
  • 1/2 cup white granulated sugar
  • 2 large egg yolks
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1 inch knob ginger (finely grated)

Additional:

  • 1/2 pint of berries (combination of blackberries and blueberries)
  • 12 to 14 sprigs of mint
  • 1 tablespoon powdered sugar

Instructions

  1. To Make the Meringues: Preheat oven, prepare baking sheets, mix and beat egg whites, sugar, and flavorings, pipe meringues, bake until crisp.
  2. To Make the Gingery Citrus Curd: Simmer citrus juice, beat butter and sugar, add eggs and ginger, cook over double boiler until thickened and smooth, strain if desired, chill.
  3. To Assemble the Meringues: Fill meringues with citrus curd, top with berries, mint, and powdered sugar before serving.
