Instructions

  1. Preheat and prepare pastry: Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry sheet on a lightly floured surface and cut into circles of desired size. Place these circles onto a baking sheet lined with parchment paper to prevent sticking.
  2. Sauté shallots and mushrooms: Heat olive oil in a skillet over medium heat. Add the thinly sliced shallots and cook slowly until caramelized, about 5-7 minutes, stirring occasionally. Then add the sliced mushrooms and cook together until the mushrooms are tender and any released liquid has evaporated. Season the mixture with salt and pepper to taste, then remove from heat.
  3. Prepare cheese mixture: In a small bowl, combine the herbed goat cheese and heavy cream. Stir until smooth and creamy, which will help in spreading the mixture evenly over the pastry.
  4. Assemble tarts: Spread a generous layer of the goat cheese mixture onto each puff pastry circle, leaving a small border around the edges. Top each with a spoonful of the mushroom and shallot mixture. Lightly brush the exposed edges of the pastry with the beaten egg to achieve a golden finish when baked.
