For the Nashville Hot Mayo:

  • 1/2 cup mayonnaise
  • 1/2 lemon, juiced
  • 3 tablespoons McCormick® Grill Mates® Nashville Hot Chicken Seasoning, divided

For the Chicken Cheesesteaks:

  • 1 tablespoon oil
  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite-size chunks
  • 1 medium green bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 4 slices pepper Jack cheese
  • 2 (8- to 10-inch) hoagie rolls, toasted
  • Dill pickle slices

Instructions

  1. Step 1: Mix mayo, lemon juice, and 1 tablespoon of the Nashville Hot Chicken Seasoning in a small bowl. Cover and set aside. Toss chicken with oil and remaining 2 tablespoons Nashville Hot Chicken Seasoning until evenly seasoned.
  2. Step 2: Heat a flat top grill on high heat. Cook peppers and onions until softened. Push to cooler area of the grill. Add chicken and cook until done. Combine chicken, peppers, onions, and cheese until cheese melts.
  3. Step 3: Divide the chicken mixture into 2 portions. Place each portion on a hoagie roll. Fill the rolls using a spatula.
  4. Step 4: Top the chicken cheesesteaks with pickle slices and Nashville hot mayo. Cut in half and serve.
