Instructions

  1. Prepare muffin pan: Line a metal muffin pan with paper liners or use a silicone muffin pan without liners for easy removal.
  2. Make the oat layer: In a mixing bowl, combine quick-cooking oats, honey, ⅓ cup creamy peanut butter, and chopped peanuts. If the mixture feels too dry, add 1 to 2 teaspoons of water. Press about 2 tablespoons of this mixture firmly into the bottom of each muffin cup.
  3. Create the chocolate layer: Melt chopped dark chocolate and 2 teaspoons coconut oil together in a microwave-safe bowl, heating in 20-second increments until smooth. Pour approximately 2 teaspoons of melted chocolate over the oat layer in each muffin cup and gently swirl the pan to spread it evenly. Freeze for 5 minutes to set.
  4. Prepare the peanut butter layer: Microwave ½ cup peanut butter mixed with 1 teaspoon coconut oil for 15 seconds, then stir. Spoon 2 teaspoons of this warmed mixture onto the set chocolate layer in each muffin cup. Swirl lightly, then sprinkle mini chocolate chips evenly over each cup.
