Ingredients

Scale

Butter and Aromatics

  • 4 Tbsp unsalted butter, divided
  • 23 cloves garlic, finely minced

Pasta and Liquids

  • 1 ½ cups uncooked ditalini pasta
  • 2 ½ cups chicken broth (or more as needed)
  • ⅓ cup heavy cream (or more as desired)

Cheese and Seasonings

  • 5.3 oz garlic and fine herbs Boursin cheese (room temperature)
  • Salt, to taste
  • Black pepper, to taste
  • Chili flakes, to taste
  • Squeeze of fresh lemon juice (1-2 Tbsp)

Garnish

  • Fresh basil leaves
  • Grated parmesan cheese
  • Additional chili flakes

Instructions

  1. Melt Butter and Sauté Garlic: Heat 1 tablespoon of unsalted butter in a hot skillet over medium heat. Add the finely minced garlic and cook while stirring constantly for 30 seconds to one minute until the garlic is fragrant but not browned or burnt.
  2. Add Pasta: Add the uncooked ditalini pasta to the skillet and stir well to coat the pasta with the butter and garlic mixture evenly.
  3. Simmer Pasta in Broth: Pour in 2 cups of chicken broth and bring the mixture to a boil. Lower the heat and let it simmer uncovered for 8 to 10 minutes, stirring occasionally, until the pasta is tender and most of the broth has been absorbed. If the broth evaporates before the pasta is fully cooked, gradually add more broth as needed.
  4. Add Cream and Thicken: Stir in the ⅓ cup of heavy cream and continue simmering for a few more minutes until the sauce thickens slightly and the pasta is creamy.
  5. Mix in Cheese and Season: Remove the skillet from heat, add the remaining 3 tablespoons of butter and stir until melted. Then add the garlic and fine herbs Boursin cheese, salt, black pepper, and chili flakes to taste. Squeeze in fresh lemon juice and stir well. Adjust seasoning if needed. Optionally, return to low heat to warm and blend the cheese into a creamy sauce.
  6. Garnish and Serve: Serve the pasta garnished with fresh basil leaves, grated parmesan cheese, and a sprinkle of chili flakes. The pasta will thicken as it cools, so if reheating, add a splash of broth or water to loosen the sauce.

Notes

  • Use room temperature Boursin cheese for easier melting and creamier texture.
  • If you prefer a vegetarian version, substitute the chicken broth with vegetable broth.
  • Add more cream or broth as needed to achieve desired sauce consistency.
  • Keep an eye on the garlic during sautéing to avoid burning, which can cause bitterness.
  • This dish thickens upon cooling; reheat gently with added broth or water to restore creaminess.
  • Feel free to customize seasoning with extra herbs like thyme or parsley for added flavor.
