Chicken and Rice:
- 3 tablespoons extra virgin olive oil (divided)
- 1/2 medium yellow onion, diced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- 1 cup uncooked extra-long grain white rice
- 2 1/2 cups low-sodium chicken broth
Broccoli and Cheese:
- 1 large bunch fresh broccoli
- 1 1/2 to 2 cups extra sharp cheddar cheese
- Sauté Onions: Heat 2 tablespoons of olive oil over medium heat, sauté diced onions until softened.
- Season Chicken: Season chicken with salt and pepper.
- Cook Chicken: Increase heat to medium-high, add chicken to the pan, brown it, then add minced garlic.
- Sauté Rice: Push chicken to the side, sauté rice in olive oil until golden.
- Add Broth: Pour in chicken broth, bring to a boil, then cover and simmer.
- Add Broccoli: After 12 minutes, add broccoli, cover, and cook until tender.
- Melt Cheese: Remove from heat, stir in some cheese, then top with the rest and let it melt.
