  • 3 tablespoons extra virgin olive oil (divided)
  • 1/2 medium yellow onion, diced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup uncooked extra-long grain white rice
  • 2 1/2 cups low-sodium chicken broth

Broccoli and Cheese:

  • 1 large bunch fresh broccoli
  • 1 1/2 to 2 cups extra sharp cheddar cheese

Instructions

  1. Sauté Onions: Heat 2 tablespoons of olive oil over medium heat, sauté diced onions until softened.
  2. Season Chicken: Season chicken with salt and pepper.
  3. Cook Chicken: Increase heat to medium-high, add chicken to the pan, brown it, then add minced garlic.
  4. Sauté Rice: Push chicken to the side, sauté rice in olive oil until golden.
  5. Add Broth: Pour in chicken broth, bring to a boil, then cover and simmer.
  6. Add Broccoli: After 12 minutes, add broccoli, cover, and cook until tender.
  7. Melt Cheese: Remove from heat, stir in some cheese, then top with the rest and let it melt.
