This One Pot Marry Me Chicken Pasta is a creamy and flavorful dish that’s easy to make and perfect for a cozy night in. Tender chicken, sun-dried tomatoes, and penne pasta are cooked in a luscious cream sauce with Parmesan cheese and fresh basil.

Chicken:

  • 1 pound chicken breasts, sliced thin
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil

Sauce:

  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup sun-dried tomatoes in oil, drained and julienned
  • 1/2 teaspoon Italian seasoning (no salt added)
  • 8 oz penne pasta, uncooked
  • 1 cup Parmesan cheese, freshly shredded
  • Fresh basil, for garnish
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Chicken: Pat chicken breasts dry, season with salt and pepper, and dredge through flour. Brown chicken in olive oil over medium-high heat. Remove and set aside.
  2. Make the Sauce: In the same pan, melt butter and sauté garlic and red pepper flakes. Add chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, salt, and pepper. Simmer.
  3. Cook the Pasta: Stir in uncooked pasta and top with chicken breasts. Cover and simmer for 20 minutes until pasta is tender.
  4. Finish the Dish: Remove chicken, stir in Parmesan and basil. Slice chicken, return to the sauce, and serve.

Notes

  • Make sure not to overcook the chicken as it will continue to cook in the sauce.
  • Adjust the seasoning according to your taste preference.
