Chicken:
- 1 pound chicken breasts, sliced thin
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
Sauce:
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/4 cup sun-dried tomatoes in oil, drained and julienned
- 1/2 teaspoon Italian seasoning (no salt added)
- 8 oz penne pasta, uncooked
- 1 cup Parmesan cheese, freshly shredded
- Fresh basil, for garnish
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Prepare the Chicken: Pat chicken breasts dry, season with salt and pepper, and dredge through flour. Brown chicken in olive oil over medium-high heat. Remove and set aside.
- Make the Sauce: In the same pan, melt butter and sauté garlic and red pepper flakes. Add chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, salt, and pepper. Simmer.
- Cook the Pasta: Stir in uncooked pasta and top with chicken breasts. Cover and simmer for 20 minutes until pasta is tender.
- Finish the Dish: Remove chicken, stir in Parmesan and basil. Slice chicken, return to the sauce, and serve.
Notes
- Make sure not to overcook the chicken as it will continue to cook in the sauce.
- Adjust the seasoning according to your taste preference.
