Dry Ingredients:
- 2 cups flour
- 1 cup sugar
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
Wet Ingredients:
- 1/4 cup butter, room temperature
- 1 cup orange juice
- 1 Tablespoon orange zest
- 1 egg
Additional:
- 2 cups fresh cranberries, cut in half
- 1/2 cup walnuts (optional)
- Preheat oven to 350°F Line the bottom of a 9″ bread pan with parchment paper or non-stick foil. Spray entire pan with cooking spray and set aside.
- In a mixing bowl combine flour, sugar, baking powder, salt & baking soda. Add butter and mix until mixture is crumbly.
- With mixer on, slowly add orange juice, a little at a time until smooth and creamy.
- Add zest and egg and blend well.
- Fold in cranberries and walnuts (optional).
- Pour mixture into prepared loaf pan and bake for 1 hour – 1 hour 10 minutes or until toothpick inserted into center comes out clean.
