  • 4 egg whites (as per cake mix box)
  • 1 ¼ cups water (as per cake mix box)
  • ½ cup oil (as per cake mix box)

Orange Gelatin Mixture:

  • 3 oz small box orange gelatin (Jello)
  • ¾ cup boiling water
  • ¾ cup cold water

Orange Marmalade Layer:

  • ½ cup orange marmalade

Frosting:

  • 3.4 oz small box instant vanilla pudding
  • 1 cup milk
  • 8 oz frozen whipped topping, thawed (Cool Whip)

Optional Garnish:

  • 15 oz can Mandarin oranges, drained

Instructions

  1. Prepare the Cake: Follow the instructions on the white cake mix box to prepare the cake batter. Bake according to package directions and let it cool.
  2. Prepare Orange Gelatin Mixture: Dissolve the orange gelatin in boiling water, then add cold water. Pour this mixture into holes poked in the cake.
  3. Add Orange Marmalade: Spread a thin layer of orange marmalade over the cake.
  4. Make the Frosting: Whisk together instant vanilla pudding mix and milk, then fold in the whipped topping. Spread this frosting over the cake.
  5. Refrigerate: Chill the cake for at least 4 hours or overnight. Garnish with Mandarin oranges before serving if desired.
