Ingredients

Scale

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese (0% – 2% fat recommended)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Cheese

  • ½ cup shredded cheese (cheddar or feta)

Optional Mix-ins (choose up to 1 cup total)

  • Chopped fresh spinach
  • Diced bell peppers
  • Broccoli florets
  • Cooked sausage
  • Diced ham

Instructions

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C) and grease a silicone muffin tray to ensure the egg bites don’t stick after baking.
  2. Blend the Base: In a blender, combine the eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until the mixture is smooth and well combined to create a creamy texture.
  3. Fill the Cups: Pour about ¼ cup of the blended egg mixture into each muffin cavity, distributing evenly to form the base for each egg bite.
  4. Customize the Flavor: Add your chosen mix-ins such as chopped spinach, bell peppers, broccoli, cooked sausage, or diced ham to each cup. Stir gently to incorporate the mix-ins and then sprinkle shredded cheese on top for extra flavor.
  5. Bake to Perfection: Place the muffin tray in the oven and bake for 18-22 minutes until the centers of the egg bites are just set and no longer jiggly. Once baked, allow them to cool slightly before removing from the tray.

Notes

  • Use low-fat or fat-free cottage cheese to keep the egg bites light and high in protein.
  • Feel free to customize with your favorite low-carb vegetables or cooked meats to add variety.
  • These egg bites can be stored in an airtight container in the refrigerator for up to 4 days.
  • For reheating, microwave for 30-60 seconds until warmed through or reheat in an oven at 325°F for about 10 minutes.
  • Make sure not to overbake to keep the egg bites moist and tender.
