  • Fresh cracked pepper, to taste
  • 1 teaspoon Italian seasoning
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon red chili pepper flakes (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the farfalle pasta until al dente, according to package instructions. Drain and set aside.
  2. Sauté mushrooms: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 3 minutes until they are lightly browned and tender.
  3. Add garlic and deglaze: Stir in the minced garlic and cook for about 30 seconds until fragrant. Pour in a small amount of vegetable broth to deglaze the pan, scraping up any browned bits. Reduce heat and cook for another 1-2 minutes. Then transfer the mushrooms to a plate and set aside.
  4. Wilt spinach: In the same skillet, add the fresh spinach and cook for about 2 minutes until wilted. Season with salt and freshly cracked pepper to taste.
  5. Combine pasta and vegetables: Push the wilted spinach to one side of the skillet and return the sautéed mushrooms to the pan. Add the drained pasta and toss everything together to combine evenly.
  6. Finish with cheese and seasoning: Stir in the grated Parmesan cheese, remaining tablespoon of olive oil, and Italian seasoning. Toss quickly until the cheese melts and coats the pasta well.
