Muffins:

  • 1 1/2 teaspoon baking powder

  • 2/3 cup white sugar
  • 1 cup chopped fresh (or canned) peaches (divided 3/4 and 1/4)
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Topping:

  • 1/4 cup all-purpose flour
  • 3 tablespoons white sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 4 tablespoons cold unsalted butter

Instructions

  1. For the muffins: Preheat the oven to 350°F (175°C) and prepare a muffin tin with 12 cups.
  2. Add flour, baking powder, salt, and sugar in a bowl, whisk to combine.
  3. Stir in 3/4 cup of peaches.
  4. Combine milk, egg, oil, and vanilla extract, then mix with the flour mixture.
  5. Divide batter into muffin cups.
  6. For the topping: Mix flour, sugar, cinnamon, and baking powder in a small bowl.
  7. Add butter and crumble with fingers until it resembles crumbs.
  8. Top muffins with remaining peaches and streusel topping.
  9. Bake for about 20 minutes until golden and a toothpick comes out clean.
