Peach Filling

  • 8 cups peeled and thinly sliced fresh peaches
  • ½ cup granulated sugar

Crisp Topping

  • ½ cup + ½ cup (1 stick) salted butter, room temperature
  • ½ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¾ cup packed light brown sugar
  • 1 ¾ cup old-fashioned oats

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 400°F (200°C). Butter a 9×9 inch baking pan to prevent sticking and set aside.
  2. Mix Peach Filling: In a large bowl, combine the peeled and sliced peaches with granulated sugar, 2 tablespoons of flour, cornstarch, 1 teaspoon cinnamon, and salt. Toss until the mixture is evenly coated. Pour this peach mixture evenly into the prepared baking pan.
  3. Prepare Crisp Topping: Using the same large bowl, cream together the light brown sugar, remaining ½ cup flour, room temperature butter, and 1 teaspoon cinnamon until the mixture is wet and clumpy. Add the old-fashioned oats and stir well to form a coarse mixture. Using your hands can help create a crumbly texture.
  4. Assemble and Bake: Evenly crumble the oat topping over the peach filling in the pan. Bake the crisp in the preheated oven for 20 to 25 minutes until the oat topping turns light golden brown around the edges.
  5. Cool and Serve: Remove the crisp from the oven and let it rest for 10 minutes to cool and set. Serve warm, optionally with vanilla ice cream for an extra indulgent touch.
