Peanut Butter Dough

Chocolate Coating

  • 10 oz milk chocolate melting wafers

Instructions

  1. Prepare peanut butter mixture: Add salted peanuts, granulated sugar, canola oil, and vanilla into a food processor. Process for 4-5 minutes until peanuts form a spreadable thick ball and smooth peanut butter.
  2. Make peanut butter dough: Transfer the homemade peanut butter to a stand mixer. Add powdered sugar and mix on low to medium speed until a thick dough forms.
  3. Roll out dough: Place plastic wrap on the countertop and roll the dough to approximately 3/4 inch thickness.
  4. Cut dough into egg shapes: Use a small egg-shaped cookie cutter to cut the dough. Place egg-shaped pieces on a parchment or silicone-lined cookie sheet and freeze for 30 minutes.
  5. Melt chocolate wafers: While eggs are freezing, melt the milk chocolate wafers in the microwave according to package directions until completely smooth.
  6. Dip peanut butter eggs in chocolate: Remove the frozen peanut butter eggs and dip each completely into melted chocolate. Place dipped eggs onto silicone mat or parchment paper to set. Refreeze any undipped eggs as needed for easier coating.
  7. Set chocolate coating: Allow chocolate-covered eggs to fully set at room temperature.
  8. Store: Keep finished peanut butter eggs at room temperature for up to 4 days and enjoy!
