Ingredients

Scale

Main Ingredients

  • 1/4 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal

Topping

  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare the Pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to ensure the treats don’t stick and can be removed easily.
  2. Melt Butter, Marshmallows, and Peanut Butter: In a large saucepan over low heat, gently melt the unsalted butter, mini marshmallows, and peanut butter together. Stir constantly but gently to prevent burning until the mixture is smooth and fully combined.
  3. Combine with Cereal: Remove the saucepan from heat once the mixture is melted. Immediately add the Rice Krispie cereal and stir until every cereal piece is coated evenly with the marshmallow and peanut butter mixture.
  4. Press into Pan: Transfer the mixture into the prepared pan. Press down firmly using lightly greased hands or a spatula to create an even layer. Lightly spray your hands with non-stick spray to prevent sticking.
  5. Melt Chocolate Chips: Place the chocolate chips and vegetable oil in a medium heatproof bowl. Microwave on medium power in 45-second intervals, stirring between each interval until the chocolate is almost fully melted. Continue stirring until smooth.
  6. Top the Bars: Pour the melted chocolate mixture evenly over the pressed treats. Spread if necessary to cover the surface completely.
  7. Set and Harden: Allow the chocolate topping to harden at room temperature for about 2 hours to set properly.
  8. Cut and Store: Once the chocolate is firm, cut the treats into squares. Store in an airtight container at room temperature for up to 3 days for best freshness.

Notes

  • Use non-stick cooking spray or butter for greasing to facilitate easy removal from the pan.
  • If you prefer, substitute creamy peanut butter with natural peanut butter but expect slightly different texture.
  • The vegetable oil added to chocolate helps achieve a smooth, glossy finish on top.
  • For a nut-free version, omit peanut butter and substitute with extra marshmallows or a safe alternative.
  • Store treats in an airtight container at room temperature to maintain their chewy texture.
  • Microwave power varies; adjust microwaving time accordingly to avoid burning chocolate.
