Cookie Dough

  • 1/2 cup crushed peppermint candies

Instructions

  1. Prepare the dough: In a small bowl, cream 1 cup softened butter and 1/2 cup confectioners’ sugar using an electric mixer until light and fluffy, about 3-4 minutes. Beat in 1/2 teaspoon peppermint extract until combined. In another bowl, whisk together 1 1/4 cups all-purpose flour and 1/2 cup cornstarch. Gradually add the dry ingredients to the creamed mixture, beating to combine. Cover the dough and refrigerate for 30 minutes or until firm enough to handle.
  2. Preheat oven and shape cookies: Preheat your oven to 350°F (175°C). Shape the chilled dough into 1-inch balls and place them 2 inches apart on ungreased baking sheets.
  3. Bake the cookies: Bake for 9-11 minutes or until the bottoms are lightly browned. Remove the cookies from the pans and transfer to wire racks to cool completely.
  4. Make the frosting: In a small bowl, beat 2 tablespoons softened butter until creamy. Beat in 2 tablespoons 2% milk, 1/4 teaspoon peppermint extract, and if desired, 2 to 3 drops red food coloring for a festive touch. Gradually beat in 1 1/2 cups confectioners’ sugar until smooth.
