Ingredients

Scale

Main Ingredients

  • 1 cup fresh or frozen green baby peas
  • 2 cups cooked chicken, diced or shredded
  • 1/3 cup homemade pesto sauce
  • 1/4 cup plain Greek yogurt or unsweetened coconut yogurt
  • 2 tablespoons sun-dried tomatoes, chopped
  • Sea salt, to taste
  • Ground black pepper, to taste
  • Red pepper flakes, optional, for garnish

Serving

  • Lettuce leaves for serving: butter lettuce, Boston bibb lettuce, Romaine, red or green leaf, collard greens, iceberg, or cabbage leaves

Instructions

  1. Thaw the peas: If using frozen peas, place them in a colander and run under hot water for about one minute to thaw. Allow them to drain completely and set aside.
  2. Prepare the chicken: Chop or shred cooked chicken into bite-sized pieces and place in a large mixing bowl.
  3. Combine ingredients: Add the thawed peas, homemade pesto sauce, plain Greek or coconut yogurt, and chopped sun-dried tomatoes to the bowl with chicken.
  4. Mix and season: Toss all ingredients well to combine evenly. Season with sea salt and ground black pepper to taste, adjusting seasoning as desired.
  5. Prepare lettuce wraps: Lay several lettuce leaves doubled up to create a sturdy base for the wraps.
  6. Assemble and serve: Spoon the pesto chicken salad mixture into the prepared lettuce leaves. Optionally sprinkle with red pepper flakes for a hint of spice and enjoy immediately.

Notes

  • For a dairy-free option, use unsweetened coconut yogurt instead of Greek yogurt.
  • Homemade pesto can be substituted with store-bought pesto if pressed for time.
  • Use any variety of lettuce or large leafy greens that can hold fillings securely.
  • Red pepper flakes add a nice heat but can be omitted for a milder flavor.
  • This recipe works great as meal prep; keep salad and lettuce separate until ready to serve to maintain crispness.
