Glaze

  • 1 cup fresh pineapple chunks
  • ¼ cup pineapple juice
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp garlic, minced
  • 1 tbsp fresh ginger, grated
  • ½ tsp chili flakes (optional)
  • 1 tbsp lime juice

Garnish

  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare the Glaze: In a blender, combine pineapple chunks, pineapple juice, honey, soy sauce, olive oil, minced garlic, grated ginger, chili flakes (if using), and lime juice. Blend until the mixture is smooth and well combined.
  3. Season and Coat Salmon: Season the salmon fillets with salt and black pepper on both sides. Arrange them on the prepared baking sheet and brush each fillet with half of the pineapple glaze, ensuring they are well-coated.
  4. Bake the Salmon: Place the baking sheet in the oven and bake the salmon for 15 to 18 minutes. In the last 5 minutes of baking, brush the fillets with the remaining glaze to add extra flavor and a lovely glaze finish.
  5. Garnish and Serve: Once baked, remove the salmon from the oven and garnish with freshly chopped cilantro. Serve immediately alongside rice or your choice of vegetables for a complete meal.
