Puppy Chow Bars are a deliciously sweet and crunchy treat made from crispy Rice Chex cereal coated in a rich mixture of melted chocolate, creamy peanut butter, and mini marshmallows, then finished with a light dusting of confectioners’ sugar.   • 7 cups Rice Chex cereal (start with 5 cups and check consistency)
  • 1 bag (10 ounces) mini marshmallows
  • ¼ cup (31 g) confectioners’ sugar

Wet Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 cup (258 g) creamy peanut butter
  • ¼ cup (½ stick / 57 g) unsalted butter (can use salted)

Instructions

  1. Add Chex to bowl: In a large mixing bowl, pour in the Rice Chex cereal and set it aside, ready to be coated.
  2. Microwave chocolate chips, peanut butter, and butter: In a separate medium microwave-safe bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and unsalted butter. Microwave the mixture in 30-second intervals, stirring well each time, until the ingredients are fully melted and smoothly blended.
  3. Add marshmallows and melt: Stir the mini marshmallows into the melted chocolate and peanut butter mixture. Return the bowl to the microwave and heat again in 30-second intervals, stirring between each, until the marshmallows puff up and melt into a thick, creamy coating.
  4. Pour marshmallow mixture over cereal: Pour the melted marshmallow and chocolate mixture over the Rice Chex cereal in the mixing bowl. Stir thoroughly to generously coat all the cereal pieces with the creamy mixture.
  5. Press mixture into baking dish and refrigerate: Transfer the coated cereal mixture into a greased 9×13 inch baking pan. Press it down firmly and evenly using a spatula or your hands, then refrigerate for 10 to 15 minutes until set.
  6. Coat top of bars with confectioners’ sugar: Once chilled and firm, lightly dust the top of the bars with confectioners’ sugar for a sweet finishing touch. Cut into squares and serve.
