Potatoes:

  • 2 lbs Yukon Gold potatoes, peeled and chopped

Roasted Garlic:

  • 1 whole head of garlic
  • Olive oil for roasting garlic

Additional Ingredients:

  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Boil Potatoes: Boil the chopped potatoes in salted water for 15-20 minutes until fork-tender. Drain well.
  3. Evaporate Moisture: Return the potatoes to the pot over low heat for a minute to evaporate excess moisture.
  4. Combine Ingredients: Squeeze the roasted garlic into the potatoes and add butter and cream. Mash until smooth; season with salt and pepper.
  5. Adjust Seasoning: Adjust seasoning as needed before serving warm.

Notes

  • For a twist, try adding grated Parmesan cheese or chopped chives to the mashed potatoes.
