Ingredients

Scale

Salami Cups

  • 24 slices salami (large size, 4 inches in diameter – regular or spicy)

Filling

  • 1/2 cup fresh mozzarella cheese (4 oz, diced)
  • 1/2 cup cherry tomatoes (quartered)
  • 1/3 cup marinated bell pepper (well drained and coarsely chopped)
  • 1/4 cup pitted kalamata olives (chopped, optional)
  • 1/3 cup marinated artichoke hearts (optional, well drained, coarsely chopped)
  • 1 Tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves (thinly sliced, for garnish)

Instructions

  1. Prepare Salami Cups: Lay each slice of salami over a standard muffin tin or cupcake pan, pressing them into the cups using a small ramekin or measuring cup. This creates pleats that help the salami hold its shape when baked.
  2. Bake Salami: Bake the salami cups at 400°F (200°C) for 7-9 minutes or until the edges are crisp and the slices retain their bowl-like form. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  3. Make Filling: In a mixing bowl, combine the diced fresh mozzarella, quartered cherry tomatoes, chopped marinated bell pepper, kalamata olives, marinated artichoke hearts, and extra virgin olive oil. Gently stir to mix all ingredients without crushing.
  4. Assemble Cups: Spoon the prepared filling evenly into each cooled salami cup. Garnish each with thinly sliced fresh basil leaves for a burst of color and flavor.
  5. Serve: Arrange the filled salami cups on a platter and serve immediately as an elegant appetizer or antipasto treat.

Notes

  • Use large salami slices that are about 4 inches in diameter to ensure they fit nicely in the muffin tin and hold their shape.
  • Make sure the marinated vegetables such as bell peppers and artichoke hearts are well drained to avoid soggy cups.
  • These cups can be prepared ahead of time and assembled just before serving to maintain crispness.
  • For a spicy kick, use spicy salami slices instead of regular.
  • Feel free to customize the filling with other antipasto ingredients like roasted red peppers or sun-dried tomatoes.
