Salt and Pepper Crispy Shrimp Recipe

For Salt and Pepper Mix:
- 1 tbsp Sichuan Peppercorns
- 1 tbsp Black Peppercorns
- 1 tbsp Sea Salt
For Shrimp:
- 18–20 large Shrimp, peeled and deveined, butterfly shape
- 1 cup Cornstarch
- 1 long fresh Thai Red Chilli, finely chopped
- 2 long dried Red Chilies, roughly chopped
- 2 Green Onions, sliced
- 1 tbsp Vegetable Oil + Oil for frying
- some Coriander for garnish
- Lime wedges to serve
- 1 tbsp Light Soy Sauce
- 1 tbsp Chinese Cooking Wine
- 1 Egg, whisked
- Toast and Grind Spices: Toast Sichuan Peppercorns and Black Peppercorns until fragrant. Grind into a fine powder.
- Create Salt and Pepper Mix: Mix ground spices with Sea Salt.
- Marinate Shrimp: Butterfly the Shrimp, then marinate with Soy Sauce, Cooking Wine, and Egg.
- Coat Shrimp: Coat marinated Shrimp with Cornstarch.
- Fry Shrimp: Fry coated Shrimp until golden brown.
- Stir-Fry: Stir-fry Garlic, Chilies, and Onions, then add fried Shrimp and Salt and Pepper mix.
- Serve: Garnish with coriander and serve with Lime wedges.
Notes
- Make sure the oil is hot enough before frying the Shrimp to ensure crispiness.
- Adjust the amount of Salt and Pepper mix according to personal preference.
