Meat Sauce

  • 1/2 pound ground beef (or 1 pound ground beef and omit the pork)
  • 1/2 pound ground pork
  • 1 tbsp Italian seasoning
  • 1 tsp salt, divided
  • 1 tsp black pepper, divided
  • 2 (24 ounce) jars marinara sauce

Ricotta Filling

  • 15 ounces ricotta cheese
  • 1/2 cup cottage cheese (optional)
  • 2 eggs
  • 3/4 cup grated Parmesan cheese, divided
  • 1 tablespoon fresh basil (chopped) or 1 tsp dried basil
  • 2 tablespoons fresh parsley (chopped) or 2 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder

Assembly

  • 1 box oven-ready lasagna noodles (1214 noodles)
  • 8 ounces fresh mozzarella cheese (sliced)
  • 2 cups shredded mozzarella cheese
  • Fresh sliced basil or parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to ensure it’s at the right temperature for baking the lasagna evenly.
  2. Cook the Meat Sauce: In a large pan over medium heat, cook the ground beef and ground pork until no longer pink, about 7-10 minutes. Break up the meat as it cooks to ensure even browning.
  3. Season the Meat Sauce: Add Italian seasoning, 1/2 teaspoon salt, and 1/2 teaspoon black pepper to the cooked meat. Stir in the marinara sauce combining it thoroughly. Remove from heat and set aside.
  4. Prepare the Ricotta Filling: In a medium bowl, mix ricotta cheese, cottage cheese (if using), eggs, 1/2 cup Parmesan cheese, 1/2 teaspoon salt, 1/2 teaspoon pepper, chopped fresh basil, chopped fresh parsley, garlic powder, and onion powder. Stir until smooth and fully combined.
  5. Prepare the Sheet Pan: Lightly grease a 16×9-inch rimmed sheet pan or line it with foil for easy cleanup.
  6. Layer Meat Sauce: Spread half of the prepared meat sauce evenly over the bottom of the pan.
  7. Add Noodles: Lay down half of the oven-ready lasagna noodles over the meat sauce in a single layer.
  8. Spread Ricotta Mixture: Evenly spread the ricotta cheese mixture over the noodles.
  9. Layer Noodles Again: Add the remaining lasagna noodles in a single layer over the ricotta mixture.
  10. Add Remaining Meat Sauce: Spoon the remaining meat sauce evenly over the noodles.
  11. Bake Covered: Cover the sheet pan tightly with foil. Bake for 30 minutes. Optionally, place a second sheet pan underneath to catch any bubbling sauce.
  12. Prepare Cheese Topping: While baking, slice the fresh mozzarella cheese.
  13. Add Cheese Layer: Remove foil and arrange fresh mozzarella slices atop the lasagna. Sprinkle shredded mozzarella and the remaining Parmesan cheese evenly over the top.
  14. Bake Uncovered: Return the pan to the oven and bake an additional 10-15 minutes until the cheese is melted, bubbly, and lightly golden.
  15. Rest Before Serving: Allow the lasagna to cool for about 10 minutes to set and make slicing easier.
  16. Garnish and Serve: Garnish with fresh basil or parsley and extra Parmesan cheese before serving.
