Dough:

  • 2 ¼ cups all-purpose flour (plus more for kneading)
  • 1 tablespoon sugar
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 cup warm water (around 110-115F)

Toppings:

  • 11.2 pounds pizza dough (store bought or homemade)
  • 1 tablespoon olive oil
  • 2/3 cup pizza sauce
  • 2 cups mozzarella cheese
  • 4 oz pepperoni
  • parmesan cheese for topping (optional)

Instructions

  1. Quick Pizza Dough – In a large bowl, whisk together the flour, sugar, yeast, and salt.
  2. Pour in the two tablespoons of olive oil and one cup of warm water. Mix until a shaggy ball forms.

  3. Mix and Knead the Dough – Stand Mixer: Use a dough hook to mix until smooth and a ball forms (about 3 minutes). Cover with a towel and let rise for 15 minutes. Mix by Hand: Transfer the dough to a floured surface and knead for 5 minutes, adding more flour if needed. Cover with a towel or bowl and let rise for 15 minutes.
  4. Sheet Pan Pizza – Preheat oven to 450F. Coat a quarter sheet pan (13” x 9”) with one tablespoon of oil. Place the dough onto the pan and gently stretch it out. Spread the pizza sauce, mozzarella cheese, and pepperoni evenly. Bake for 11-13 minutes until cheese is melted and crust is golden brown. Let cool, then top with Parmesan cheese and slice.
