- 2 tablespoons of olive oil
- 1 1/2 cups mixed bell peppers, sliced
- 1 cup red onion, thinly sliced
- 1 cup mushrooms, sliced
- 1 pound shrimp, deveined and shelled
Seasonings and Cheeses:
- 3 tablespoons taco seasoning
- 1/4 cup heavy cream, plus more for thinning
- 2 ounces cream cheese, softened
- 1 1/2 cups shredded pepper jack cheese
- 1/2 cup white American cheese
- Heat Skillet: Heat a large skillet over medium heat, then add olive oil.
- Sauté Vegetables: Add bell peppers, onion, and mushrooms. Sauté for 5-6 minutes until tender.
