  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp parsley flakes
  • 2 garlic cloves, minced
  • ½ tsp salt
  • Freshly ground pepper to taste

Cilantro Lime Sauce:

  • 3 tbsp olive oil
  • 5 green onions, chopped
  • ½ cup cilantro leaves
  • 2 garlic cloves
  • Juice of 2 limes
  • ½ jalapeno pepper (optional)
  • ½ cup nonfat Greek yogurt
  • ¼ tsp salt (or to taste)
  • Freshly ground pepper to taste

Instructions

  1. Cilantro Lime Sauce: Combine all sauce ingredients in a food processor or blender. Pulse until smooth, adding water if needed for consistency.
  2. Cook the Shrimp: Season shrimp with spices and garlic. Cook in a skillet until opaque, about 2 minutes per side. Set aside.
