  • 2 pounds ground beef, seasoned with salt & pepper
  • 1/2 cup onion, diced

Condiments and Seasonings

  • 2 tablespoons relish
  • 2 tablespoons dry mustard or yellow mustard
  • 8 ounces tomato sauce or ketchup
  • 1 1/2 teaspoons salt (or more to taste)
  • 1/2 teaspoon pepper

Cheese and Tortillas

  • 3 cups cheddar cheese, shredded (or more if desired)
  • 4 medium-size soft flour tortillas

Instructions

  1. Brown the Beef and Onion: In a large skillet over medium heat, add the ground beef and diced onion. Cook for 5-7 minutes until the beef is browned and the onion is softened. Crumble the meat as it cooks for even cooking. Drain any excess grease from the skillet.
  2. Add Seasonings and Sauce: Stir in the relish, dry or yellow mustard, salt, pepper, and tomato sauce or ketchup. Cook the mixture for a few more minutes until heated through and well combined.
  3. Prepare the Slow Cooker: Generously spray the inside of your slow cooker with cooking spray to prevent sticking.
  4. Layer Your Casserole: Divide the prepared meat mixture into three equal portions. Place one portion in the bottom of the slow cooker, then sprinkle with 1 cup of shredded cheddar cheese. Layer 2 tortillas on top, possibly overlapping them to fit. Repeat this layering process two more times, finishing with a final layer of cheese on top.
  5. Cook: Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours until the cheese is melted and the casserole is heated through.
