  • 68 slices Swiss or provolone cheese
  • 68 crusty rolls (we like ciabatta)

Instructions

  1. Prepare the Roast: Heat olive oil in a large skillet over medium-high heat. While the oil is heating, generously season all sides of the chuck roast with kosher salt and freshly ground pepper.
  2. Sear the Roast: When the oil starts to shimmer, carefully place the roast in the hot pan and sear it on all sides by letting it sit without moving for a minute or two on each side before flipping. This quick browning adds flavor and seals in the juices.
  3. Transfer to Slow Cooker: Move the seared roast along with the pan juices to your slow cooker. Sprinkle the dry onion soup mix evenly over the roast. Add the water and beef broth to the slow cooker.
  4. Cook the Meat: Cook the roast on high for 4-6 hours or on low for 8-10 hours until the meat is so tender that it shreds easily with a fork.
  5. Shred the Beef: Remove the roast from the slow cooker and shred it using two forks.
  6. Assemble the Sandwiches: Pile the shredded beef onto sliced crusty rolls. Top each with a slice of Swiss or provolone cheese.
  7. Broil the Sandwiches: Place the topped sandwiches under the broiler for a few minutes until the cheese melts and the buns begin to toast.
  8. Serve: Serve the sandwiches immediately with the juices from the slow cooker as au jus for dipping.
