Delicious S’mores cookie bars that combine the classic flavors of graham crackers, chocolate, and marshmallows in a convenient, portable treat.

Cookie Dough:

  • 1/2 cup Butter (softened, salted or unsalted)
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 &1/2 cup AP flour
  • 1/2 cup graham crackers (finely crushed, about 3.5 sheets)
  • 1/4 tsp salt
  • 3/4 tsp baking soda

Additional Layers:

  • 5 standard Hershey bars
  • 1 & 1/2 cup Marshmallow fluff

Instructions

  1. Preheat the oven: Preheat the oven to 350F and line an 8×8 inch baking pan with parchment paper.
  2. Cream the butter and sugars: Cream the butter, granulated sugar, and brown sugar until combined. Add the egg and vanilla extract, mix well.
  3. Add dry ingredients: Mix in the flour, graham cracker crumbs, salt, and baking soda until just combined.
  4. Layer the dough: Press half of the dough into the pan, layer with chocolate bars, marshmallow fluff, and the remaining dough.
  5. Bake: Bake at 350F for 25 minutes, then cool completely before slicing.

Notes

  • You can customize these bars by adding nuts or drizzling melted chocolate on top.
  • Store leftovers in an airtight container for up to 3 days.
