These S’mores Cookie Bars are a delightful twist on the classic campfire treat. A buttery graham cracker cookie base is topped with gooey marshmallow creme and chocolate chips, then baked to golden perfection. Perfect for satisfying your s’mores cravings without the need for a campfire!

For the Cookie Base:

  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1 cup (120g) graham cracker crumbs (about 8 full-sheet graham crackers)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Toppings:

  • 1 cup (180g) semi-sweet chocolate chips
  • 1 heaping cup marshmallow creme (store-bought “Fluff” or homemade)

Instructions

  1. Preheat oven: Preheat oven to 350°F (177°C) and line a baking pan with parchment paper.
  2. Cream butter and sugar: Cream butter and brown sugar together, then add egg and vanilla.
  3. Mix dry ingredients: Combine flour, graham cracker crumbs, baking powder, and salt in a separate bowl.
  4. Combine wet and dry: Mix dry ingredients into wet until combined.
  5. Layer the dough: Press 2/3 of dough into pan, top with marshmallow creme, chocolate chips, and remaining dough.
  6. Bake: Bake for 25-30 minutes until golden brown.
  7. Cool and cut: Cool completely, then cut into squares and enjoy!

Notes

  • You can use store-bought marshmallow creme or make your own.
  • Feel free to add nuts or extra chocolate for variation.
  • These bars are best enjoyed fresh but can be stored for up to a week.
