  • 2/3 cup freshly grated Pecorino Romano cheese, plus more to pass at the table (substitute Parmesan, if desired)
  • Pepper to taste

Instructions

  1. Cook the spaghetti: In a large pot of generously salted water, cook the spaghetti until al dente.
  2. Prepare the sauce: Whisk together milk and egg in a small bowl.
  3. Drain the pasta: Once the spaghetti is cooked, drain it.
  4. Mix the sauce: Return the drained pasta to the pot, add the milk/egg mixture and butter. Stir over low heat until the milk thickens and coats the noodles.
  5. Finish the dish: Remove from heat, add cheese, salt, and pepper. Adjust consistency with more milk if needed.
