Baby Spinach:

10 oz

  • 1 can mandarin oranges (approx. 15 oz) (drained, or 4 fresh mandarins, peeled and sectioned)
  • 1/4 cup red onion, thinly sliced

For the Salad Toppings:

  • 1/2 cup goat cheese crumbles
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup dried cranberries

For the Dressing:

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 12 tablespoons honey
  • 2 teaspoons Dijon mustard
  • Sea salt and pepper, to taste

Instructions

  1. Toasting Almonds: Preheat oven to 350°F. Place almonds on a baking sheet and toast for about 4-6 minutes or until fragrant.
  2. Preparing the Salad: Combine all salad ingredients in a medium bowl.
  3. Making the Dressing: Combine dressing ingredients and whisk well until smooth. Adjust salt and pepper to taste. If dressing is too thick, add a small amount of water to thin out.
  4. Assembling the Salad: Add desired amount of dressing to salad and toss just before serving.
